Ingredients
  

  • 4 teaspoons fine salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 3 large eggs
  • 1/4 cup water
  • 1 4-pound whole chicken or 4 pounds of pre-cut pieces
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 quarts vegetable oil for frying

Instructions
 

  • Mix salt, black pepper, garlic powder, and cayenne pepper.
  • Whisk eggs and water, then add spice blend.
  • Cut and marinate chicken for 12–24 hours.
  • Coat in seasoned flour, shaking off excess.
  • Heat oil to 350°F (180°C).
  • Fry chicken in batches for 12–15 minutes, until golden brown.
  • Drain on a wire rack and serve hot.
