Ingredients
  

  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon fine sea salt
  • 1 cup safflower or vegetable oil
  • 1 teaspoon fresh lemon juice optional

Instructions
 

  • Add the egg, Dijon mustard, vinegar, and salt to a food processor or a tall jar. Blend for 20 seconds.
  • Slowly drizzle in the oil while blending. Begin with small drops until the mixture starts thickening, then pour the rest in a steady stream.
  • Add lemon juice (if using) and blend again.
  • Taste and adjust seasoning if necessary.
  • Transfer to an airtight container and refrigerate.
